INGREDIENTS

  • 12 small pickling onions

  • ½ cup water

  • ¼ cup wine vinegar

  • ¼ cup sugar

  • ½ tsp mustard powder or 1 teaspoon Dijon mustard

  • ½ tsp salt

  • 1 egg, whisked

METHOD

  • To start, begin by peeling the onions carefully so that they remain whole.
  • Once peeled, proceed to boil the onions in salted water until they reach the desired level of doneness, making sure not to overcook them as this can cause them to fall apart.
  • Once boiled, drain the onions and set them aside.
  • In a separate pot, combine water, vinegar, sugar, mustard, and salt together and heat the mixture until the sugar is fully dissolved.
  • Once dissolved, let the mixture boil for 5 minutes. After boiling, allow the mixture to cool down before adding whisked eggs to the mixture.
  • Slowly bring the mixture to a low simmer over low heat while whisking, ensuring not to heat it too fast as it may cause the egg to separate.
  • Once the mixture has thickened, remove it from the heat and give it a final whisk.
  • To finish, pour the warm dressing over the boiled onions and allow it to cool down.
