Classic Sweet Sour Chicken: New year, same deliciousness

Covering the chicken in corn flour helps create a beautiful crunchy crust we love.
However, chicken isn’t the only meat you can use.
You can easily substitute the chicken for pork if you want to and it will be perfectly tasty.
Chives and ginger will always add some flavour and cut through richness like a tasty knife through butter.
YOu can also add some sliced peppers if you want more veggies too.
Add some egg-fried rice for a bed to place your chicken or pork onto and enjoy.

Ingredients

  • SAUCE
  • 2 tbsp corn flour / maizena

  • 1 tbsp chicken stock (1 cube chicken stock)

  • 5 tbsp honey

  • 1 bunch chives, chopped

  • 2 tbsp grated ginger

  • 1 litre water

  • CHICKEN
  • 6 skinless and boneless chicken breasts (500 g)

  • 1 cup corn flour / maizena

  • olive oil or coconut oil to taste

Method

  • SAUCE
  • Place all ingredients in a saucepan.
  • Bring to a boil on medium heat and keep stirring until thickened.  Taste if the balance of sweet and saltiness is to your taste, adjust if you need more sweetness or saltiness. Keep warm.
  • CHICKEN
  • Cut all the chicken into cubes.
  • Place the chicken in a glass bowl together with the maizena.  Make sure all the chicken is covered well.
  • Place a saucepan on high heat with 4 tablespoons of coconut oil / olive oil.
  • Sauté portions of the chicken until crispy and browned on both sides, set aside and keep warm. Continue until all the chicken is done.
  • Place the fried chicken in the warm sauce.
  • Serve immediately with cooked rice or noodles of your choice.
