Everyone is happy when they eat chocolate cake for whatever reason. The same may be true about cherry pie and chocolate chip cookies. In one delicious cake, we’ve mixed them all. Our sweet, moist cherry and chocolate chip cake makes the ideal dessert at any dinner gathering. Unexpectedly, dark chocolate and fresh cherries go nicely together, and the cake is simply the starting point for many other options.

With icings and embellishments, you may quickly add more flavour to the simple cake batter. Although there is just one layer in this cake, you can choose to double it and cover it with butter frosting. Add nuts, additional chocolate, or even more cherries to the cake’s top. For optimal results, enjoy this delicious, moist cake with your friends with a nice cup of tea or coffee. Serve with whipped cream or a generous scoop of ice cream.

Ingredients

  • 125 g caster sugar

  • 125 g deseeded cherries

  • 250 g self-raising flour

  • 2 eggs

  • 125 g butter

  • 125 g dark chocolate

  • warm water

Method

  • Cream the butter and sugar together until light and fluffy.
  • Gradually beat in the eggs one at a time.
  • Fold in the sieved flour adding some warm water to form a soft mixture.
  • Ad chipped chocolate and halved cherries.
  • Put the mixture into a greased and lined 15-20cm cake dish.
  • Bake for 90 minutes at 180°C.
  • Dredge with caster sugar and cool on a wire tray.
